Seafood Spaghetti

The original recipe called for canned tuna; I substituted shrimp.

INGREDIENTS

  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, finely diced
  • 1 bag medium shrimp
  • 1 2lb can crushed tomatoes
  • 1 can tomato sauce
  • 1 large can tomato paste
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 tsp. sugar
  • 1 lb. spaghetti cooked
  • 1 can tomato juice, or water (depending on thickness)

DIRECTIONS

  1. Heat oil in a pan; add garlic and onion. Brown over moderate heat, stirring frequently.
  2. Add tomatoes, tomato sauce, tomato paste, salt, pepper, and sugar. Bring to a boil. Cover the saucepan and simmer for 2 hours, stirring occasionally.
  3. Add the shrimp; if the mixture is too thick, add tomato juice or water, 1/2 cup at a time.
  4. Cook spaghetti in boiling salted water until tender. 10-12 minutes.
  5. Drain spaghetti and plate. Cover spaghetti with sauce and serve with grated Parmesan cheese.

Serve with a salad and hard bread for a complete meal.
