I don’t know why this is called Sailor’s beef, it may be due to the fact that it is inexpensive and easy to prepare.
Preparation time: 1 1/2 hours
INGREDIENTS
- 1 1/4 lbs. beef round or boneless chuck roast
- 3 onons
- 10 potatoes
- 2 Tbsp. butter
- 3/4 cup water
- 1 1/2 -2 tsp salt
- 1/3 tsp. black pepper
- 1 can dark beer
- 2 tbsp. chopped parsley
PREPARATION
- Slice the beef into thin strips. Peel and slice onions and potatoes. In skillet, over medium heat, melt 1 tablespoon butter. Sauté onions for a few minutes. Remove and set aside.
- In the same pan, brown meat in remaining butter. Remove the meat and set aside. Add water to the pan and scrape up the brown bits. Strain the pan juices.
- In a heavy pot, layer potatoe slices, onion and meat. Sprinkle each layer with salt and pepper.
- Add beer and pan juices to the pot. Cover and bring to a boil. Lower the heat to medium and cook for about 50 minutes or until the potatoes and meat are tender. Sprinkle with parsley and serve.
