This easy-to-prepare recipe is ready in 45 minutes. Note: Cooking bananas are green bananas. If you can’t find them at your local grocery store, visit a store that sells Hispanic food. Also, prep all ingredients before cooking.
INGREDIENTS
- 2 yellow onions
- 2 cloves of garlic
- 2 Tbsp. of oil
- 1 lb. coarsely ground beef
- 4 tomatoes
- 2 red peppers
- 1 tart apple
- Dash of chili powder
- Dash of paprika, dried thyme, and cloves
- Dash of salt
- 1 thin slice of lemon peel
- 1 cup beef broth
- 2 cooking bananas
- 4 Tbsp. peeled whole almonds
Preparation
- Peel and chop onion and garlic. In a heavy Dutch oven or pan, heat the oil. Add the onion and garlic. Quickly sauté until lightly browned, stirring constantly.
- Add ground beef. Sauté, stirring until the meat loses its pinkness.
- 3. Make a slit in each tomato. Dip in hot water for a couple of seconds. Peel and chop. Rinse peppers. Remove seeds and membrane. Peel apple. Remove core. Chop peppers and apple.
- Add tomatoes, apple, and peppers to meat. Sauté for a few minutes. Add all spices. Stir to combine. Add lemon peel.
- Add beef broth. Bring to a boil and cover. Cook over medium heat for 15 minutes. Remove lemon peel. Adjust seasonings to taste.
- Peel and slice the bananas, then add them to the pot. Bring to a boil and cook for a few minutes. Add almonds. Heat and serve.
