Soup time is coming; this is one recipe I will be making throughout the fall and winter seasons. It is easy to prepare and inexpensive. It may be served hot or cold.
Preparation Time: 25 minutes Serves: 4
INGREDIENTS:
- 1-pound sweet potatoes or yams
- 8 oz. celery root, peeled
- 2 Tbsp. butter or margarine
- 1 small onion, chopped
- 3 cups chicken broth
- 1/2 cup dry white wine
- 1 cup half and half
- Salt and pepper to taste
- Lime, optional for garnish
- Chopped peanuts, optional for garnish
PREPARATION:
- Cut sweet potatoes and celery root into 1-inch pieces. Melt butter in large saucepan. Add onion. Cook over medium-high heat until soft.
- Add celery root, potatoes, chicken broth and wine. Simmer 15 minutes until vegetables are tender.
- Add lime juice and lime peel. Purée in blender or food processor. Add half-and-half and salt and pepper to taste.
- If serving hot serve immediately or refrigerate 2 hours to serve cold. Garnish with a thin slice of lime and chopped peanuts, if desired.
