Mashed Potatoes with Broccoli

Surprise your guests by adding color to your mashed potatoes by adding broccoli, chives, and grated nutmeg.

Serves : 4

INGREDIENTS

  • 10 to 12 potatoes
  • 1 3/4 cups water
  • 1 vegetable bouillion
  • 1 bunch fresh broccoli or 1 (14 oz.) package frozen broccoli
  • 1/2 cup whipping cream
  • 3 Tbsp. finely sliced chives or green onion
  • dash of grated nutmeg

PREPARATION

  1. Peel potatoes and cut into wedges.
  2. Bring a saucepan of water and the bouillon cube to a boil. Add potatoes and cook for about 10 minutes.
  3. Rinse fresh broccoli. Cut into small florets. Add fresh or frozen broccoli to the pan. Cook for another 8 to 10 minutes. Drain well and reserve the liquid.
  4. Mash potatoes and broccoli in a blender or food processor.
  5. Return mashed potatoes to saucepan. Add the cream and reserved cooking liquid. Heat until potatoes are smooth and of desired consistency.
  6. Season to taste with chives or green onion and nutmeg. Add salt if needed. Serve immediately.
