Baked Jamaican Pineapple Jerk Chicken

In twenty-two minutes, you can create this amazing dish that will have you thinking you are in Jamaica!

INGREDIENTS

  • 4 chicken thighs (bone-in, skin-on)
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 cup fresh pineapple diced
  • 1 cup pineapple juice
  • 1 tablespoon honey
  • 1 teaspoon fresh garlic, grated
  • 1 tablespoon Soy sauce
  • 1 teaspoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 lime, juiced
  • salt and pepper to taste
  • fresh cilantro for garnish

INSTRUCTIONS

  1. In a bowl combine jerk seasoning, olive oil, salt and pepper. Rub this mixture all over the chicken thighs and let them marinate for at least one hour in the fridge.
  2. Preheat the oven to 400℉ (200℃).
  3. In a saucepan combine the diced pineapple, pineapple juice, honey, soy sauce, grated ginger, minced garlic, and lime juice. Heat until it simmers, stirring occasionally.
  4. Place the chicken in a baking dish. Pour half of the pineapple sauce over the chicken, be sure it is well coated.
  5. Cover the dish with foil and bake for 25 minutes.
  6. After 25 minutes, remove the foil and brush the remaining pineapples sauce over the chicken. Bake for 15-20 minutes or until the chicken is cooked through and has a nice golden color.
  7. Rest the chicken for about 5 minutes before serving.
  8. Garnish with cilantro. Arrange the chicken on a platter, drizzling any remaining sauce on top.
