In twenty-two minutes, you can create this amazing dish that will have you thinking you are in Jamaica!
INGREDIENTS
- 4 chicken thighs (bone-in, skin-on)
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 cup fresh pineapple diced
- 1 cup pineapple juice
- 1 tablespoon honey
- 1 teaspoon fresh garlic, grated
- 1 tablespoon Soy sauce
- 1 teaspoon fresh ginger, grated
- 2 cloves garlic, minced
- 1 lime, juiced
- salt and pepper to taste
- fresh cilantro for garnish
INSTRUCTIONS
- In a bowl combine jerk seasoning, olive oil, salt and pepper. Rub this mixture all over the chicken thighs and let them marinate for at least one hour in the fridge.
- Preheat the oven to 400℉ (200℃).
- In a saucepan combine the diced pineapple, pineapple juice, honey, soy sauce, grated ginger, minced garlic, and lime juice. Heat until it simmers, stirring occasionally.
- Place the chicken in a baking dish. Pour half of the pineapple sauce over the chicken, be sure it is well coated.
- Cover the dish with foil and bake for 25 minutes.
- After 25 minutes, remove the foil and brush the remaining pineapples sauce over the chicken. Bake for 15-20 minutes or until the chicken is cooked through and has a nice golden color.
- Rest the chicken for about 5 minutes before serving.
- Garnish with cilantro. Arrange the chicken on a platter, drizzling any remaining sauce on top.
