Don’t Use Foil for This

Developed in 1910 in Kreuzlingen, Switzerland, aluminum foil reached the U.S. in 1911. Before aluminum foil, food and other goods were wrapped in tin foil, which left a tinny taste. Aluminum was cheaper, durable, and better for packaging.

However, there are some things you should not wrap in foil. Let’s start with acidic foods, tomatoes, citrus, vinegar-based dishes, and wine-based sauces. All of these are acidic. Cooking or storing acidic foods over time can corrode the foil. The longer the food sits in foil, the more it develops a tinny flavor.

Storing leftovers in a glass container with a lid is better. If covering a casserole dish, place a sheet of parchment paper between the food and the foil, or use plastic wrap.

Ever since microwave ovens were introduced, we have been warned not to use aluminum foil to heat leftovers. Aluminum foil is a metal, and metal in a microwave can cause arcing; electromagnetic waves bounce off the foil’s surface. This can create sparks, damage your microwave, trip the breaker, or, in the worst-case scenario, start a fire.

Covering food with a microwave-safe plate or bowl turned upside down is a better alternative. A damp paper towel laid over the food works just as well. Besides catching splatter, it traps steam, so leftovers don’t dry out.

I’m sure I am not the only cook who has lined the bottom of the oven with foil. It caught all the drips, but it interrupted airflow and heat circulation, resulting in uneven cooking. Also, at high temperatures, foil can fuse to the oven’s enamel coating, causing permanent damage. Shock and fire hazard could also occur.

A better solution would be to place a rimmed sheet pan on the rack below whatever you are baking. It catches drips without interrupting circulation.

The same thing goes when grilling. Covering the grates with foil blocks the flames, smoke, and airflow that give the grill flavor and char. For grilling small foods like vegetables or shrimp, use a small basket.

Use foil appropriately to prevent disasters and tasteless food and use alternative methods for safety.
