These quick and economical squares are delicious, hearty, and satisfying.

INGREDIENTS
- 3/4 cup long-grain rice
- 1 1/2 cups boiling water
- 1 lb. pork sausage
- 1 cup meatless spaghetti sauce or pizza sauce
- 1 tsp. minced onion
- 2 tbsp. water
- 2 eggs, slightly beaten
- 1/2 tsp. dried oregano, crumbled
- 12 thin triangles of Monterey Jack or Cheddar cheese
- 1 tsp. seasoned salt
PREPARATION
- In a saucepan combine rice and boiling water. Cover and simmer for 15 minutes, or until rice is tender (do not add salt). Drain, if necessary.
- Crumble sausage into a large skillet. Cook over medium heat until lightly browned. Drain fat, reserve 1 tablespoon, and add to the spaghetti sauce.
- Mix onion and cold water. Let stand for 2 to 3 minutes to reconstitute. Stir in rice, sausage, eggs, and salt.
- Pack the mixture into an ungreased 8-inch baking dish, smoothing the top. Sprinkle with oregano.
- Bake at 400℉ for 20 minutes. Arrange the cheese triangles in a pattern on top. Bake for 5 minutes.
- Slice into squares and serve with peas and a lettuce salad or sides of your choice.
