Orange-Pepper Steaks

You will be drooling over this scrumptious steak in 20 minutes. The trick to a melt-in-your-mouth, full-of-flavor steak is to season it and refrigerate it overnight. This allows the meat to start breaking down and the seasoning to penetrate deeply. I used raspberry marmalade, which made my sauce red.

INGREDIENTS

  • 4 beef tenderloin steaks, cut 1 inch thick
  • 2 teaspoons coarse ground black pepper
  • 1/2 cup orange marmalade
  • 4 teaspoons cider vinegar
  • 1/2 teaspoon ground ginger

INSTRUCTONS

  1. Press pepper into both sides of the steaks. Place steaks on the rack in a broiler pan. The surface of the meat is 2 to 3 inches from the heat.
  2. Combine the marmalade, vinegar, and ginger. Brush the top of the steaks with half of the marmalade mixture.
  3. Broil steaks 10 to 15 minutes for rare (140℉), to medium (160℉). Turn once and brush the remaining marmalade to the steaks.

Serve with vegetables of your choice.
