This week, I ventured into making a video to post. However, I forgot to post the written recipe, so here it is!
INGREDIENTS
- 1/2 cup all-purpose flour
- 1 teaspoon dried thyme
- salt and pepper
- 2 pounds of boneless beef or bottom round, cut into 1-inch pieces
- 1/4 cup of oil
- 1 medium onion, diced
- 3 1/2 cups beef broth
- 1/2 cup red wine
- 1 teaspoon minced garlic
- 2 bay leaves
- 1/2 teaspoon paprika
- a pinch of allspice
- 6 to eight new potatoes, quartered
- 6 medium carrots, cut in large chunks
- 1 pound boiling onions
- 3 small turnips, peeled and quartered
- 1 cup frozen peas or cut green beans
- 2 tablespoons cold water
INSTRUCTIONS
- Combine the flour, thyme, and rosemary in a medium bowl. Season with salt and pepper. Add the meat and toss to coat.
- Heat the oil in a large Dutch oven over medium-high heat. Remove one-third of the meat from the flour with a slotted spoon, shaking off the excess flour. Add the meat to the oil in a single layer. Brown on all sides for about 10 minutes. Remove with a slotted spoon and keep warm. Repeat until all of the meat is browned. Reserve the remaining flour.
- Sauté the onion in the oil for 3 minutes or until softened. Stir in the broth and wine and use a wooden spoon to scrape up any bits stuck to the bottom of the pan. Return the meat to the pan, add the garlic, bay leaves, paprika, and allspice. Bring to a boil, reduce the heat, and simmer, covered for 1 1/2 hours until the meat is almost tender.
- Add the potatoes, carrots, turnips, and onions. Return to a boil. Reduce the heat and simmer, covered, for 20 minutes.
- Add the peas, and cook until all of the vegetables are tender, for about 15 minutes.
- Remove the bay leaves. Transfer the meat and vegetables to a serving dish and keep warm.
- Stir 1 tablespoon of the reserved flour into the 2 tablespoons of water in a small bowl until smooth. Stir into the cooking liquid in the Dutch Oven. Cook over medium heat, stirring, until thickened and bubbly. Cook for another 3 minutes.
- Combine the gravy with the meat and vegetables and serve hot with crusty bread.
