Beef Stew Recipe

This week, I ventured into making a video to post. However, I forgot to post the written recipe, so here it is!

INGREDIENTS

  • 1/2 cup all-purpose flour
  • 1 teaspoon dried thyme
  • salt and pepper
  • 2 pounds of boneless beef or bottom round, cut into 1-inch pieces
  • 1/4 cup of oil
  • 1 medium onion, diced
  • 3 1/2 cups beef broth
  • 1/2 cup red wine
  • 1 teaspoon minced garlic
  • 2 bay leaves
  • 1/2 teaspoon paprika
  • a pinch of allspice
  • 6 to eight new potatoes, quartered
  • 6 medium carrots, cut in large chunks
  • 1 pound boiling onions
  • 3 small turnips, peeled and quartered
  • 1 cup frozen peas or cut green beans
  • 2 tablespoons cold water

INSTRUCTIONS

  1. Combine the flour, thyme, and rosemary in a medium bowl. Season with salt and pepper. Add the meat and toss to coat.
  2. Heat the oil in a large Dutch oven over medium-high heat. Remove one-third of the meat from the flour with a slotted spoon, shaking off the excess flour. Add the meat to the oil in a single layer. Brown on all sides for about 10 minutes. Remove with a slotted spoon and keep warm. Repeat until all of the meat is browned. Reserve the remaining flour.
  3. Sauté the onion in the oil for 3 minutes or until softened. Stir in the broth and wine and use a wooden spoon to scrape up any bits stuck to the bottom of the pan. Return the meat to the pan, add the garlic, bay leaves, paprika, and allspice. Bring to a boil, reduce the heat, and simmer, covered for 1 1/2 hours until the meat is almost tender.
  4. Add the potatoes, carrots, turnips, and onions. Return to a boil. Reduce the heat and simmer, covered, for 20 minutes.
  5. Add the peas, and cook until all of the vegetables are tender, for about 15 minutes.
  6. Remove the bay leaves. Transfer the meat and vegetables to a serving dish and keep warm.
  7. Stir 1 tablespoon of the reserved flour into the 2 tablespoons of water in a small bowl until smooth. Stir into the cooking liquid in the Dutch Oven. Cook over medium heat, stirring, until thickened and bubbly. Cook for another 3 minutes.
  8. Combine the gravy with the meat and vegetables and serve hot with crusty bread.
