I stumbled upon another recipe with peanut butter. This was easy to prepare and full of sweet nutty flavor. Be sure to prep all of the ingredients as the recipe moves fast.
INGREDIENTS
- 12 cups collard greens (I purchased the ones already cut up in a bag.)
- 1 yellow onion
- 1 tomato
- 1 red chile
- 2 1/2 tbsp. olive oil
- 1 1/2 lbs. shrimp
- 2 tbsp. tomato paste
- 1/2 cup peanut butter
- 1/4 cup peanuts
INSTRUCTIONS
- Coarsely chop the collard greens, onion, and tomato. Finely chop the red chile.
- Bring 4 cups of water to a boil over high heat and generously add salt. Add collard greens, cover, and cook until tender and wilted, about 7-10 minutes. Reserve 1 cup of the cooking liquid, then drain the greens.
- In a large skillet, heat olive oil over medium-high heat. Add the shrimp and sprinkle with salt and pepper. Cook just until pink, flipping once. Remove shrimp and set aside.
- Add onions to the skillet and cook until beginning to brown, 2-3 minutes. Then add the tomato, tomato paste, peanut butter, red chile, and the reserved cooking liquid. Cook and stir until combined well into a sauce, about 5 minutes.
- Add the collard greens and shrimp to the sauce and toss. Cook until heated through, 2-3 minutes. Top with peanuts to serve.
