You may be thinking to yourself, green shrimp? This slightly tangy recipe, served with toasted bread, is delicious! It’s full of scrumptious flavor and quick to prepare!
INGREDIENTS
- 6 cloves of garlic, peeled
- 1 bunch of cilantro (about 1 cup packed leaves)
- 6 scallions, roughly chopped
- 1/2 jalapeno, seeds removed for mild heat or left in if you like it spicy
- 1/3 cup extra virgin olive oil
- 1 tablespoon of water
- Sea salt to taste
Pop the garlic, cilantro, scallions, jalapeño, olive oil. water, and a pinch of salt into a blender or food processor. Pulse until you get a smooth, vivid green sauce. It should be thick but pourable.
Taste it. If it’s too sharp, a splash of olive oil, or a tiny drizzle of water will decrease the spice.
Heat a large skillet over medium-high heat and add olive oil. Toss in the shrimp and cook for 1-2 minutes per side. Do not overcook; shrimp turns rubbery, so cook until just pink and slightly opaque.
Pour the green sauce over the shrimp and stir gently to coat. Warm everything together for a minute. Serve immediately with a drizzle of oil or a squeeze of lemon. Toasted baguettes are a great dunking tool for this dish.
